Briess Blackprinz® Malt is a very dark specialty malt designed to provide deep black color with exceptionally smooth, mild roasted flavor. Made from hulless barley, Blackprinz delivers much of the color contribution of traditional Black Malt while minimizing the bitter, astringent, and dry roasted character that can accompany heavily roasted grains.
At approximately 500° Lovibond, Blackprinz can dramatically darken a beer even when used in relatively small amounts. Its flavor contribution is surprisingly delicate for such a dark malt, with subtle roasted malt notes and a clean, smooth finish rather than intense coffee, burnt, or acrid flavors.
This makes Blackprinz especially useful for Black IPA, Schwarzbier, Black Lager, and Black Ale, where brewers often want deep color without allowing roasted malt flavor to dominate the beer. It can also be used in small amounts for color adjustment in virtually any beer style when you want to darken the beer with minimal impact on the overall flavor profile.
Because Blackprinz is produced from hulless barley, it develops less of the harsh roasted character associated with the husk of conventional dark roasted malts. The result is a smooth and restrained roast profile that makes it an excellent alternative to debittered Black Malt.
