BESTMALZ Chit Malt is a very pale German specialty malt primarily used to improve foam stability, head retention, and overall brewing performance without significantly changing the color or flavor of your beer. Its neutral character makes it useful across virtually any beer style.
At approximately 1.2–1.6° Lovibond, BEST Chit Malt is extremely light in color and can be added to pale beers without noticeably darkening the finished beer. This makes it especially useful in Pilsner, Helles, Kölsch, Pale Lager, IPA, Pale Ale, and other styles where maintaining a light color is important.
One of the main reasons to use Chit Malt is better foam. It can help create a more persistent, stable head and is particularly useful in recipes where excellent foam retention is desired without adding the flavor contribution of wheat, crystal, or more heavily kilned specialty malts.
Chit Malt can also support efficient starch conversion in the mash, making it a functional brewing ingredient as well as a foam-enhancing specialty malt.
Because its flavor contribution is mild and its color is extremely pale, Chit Malt can be incorporated into a recipe without substantially changing the intended malt profile. This makes it a useful tool when you like the flavor of your recipe but want to improve its foam and head retention.
BESTMALZ recommends using Chit Malt at up to 15% of the grain bill.
