BESTMALZ Acidulated Malt is a specialty brewing malt used to help lower and optimize mash pH, particularly when brewing water has enough alkalinity to push the mash above the desired pH range. It provides brewers with a convenient grain-based method of making mash pH adjustments without relying entirely on separate acid additions.

Proper mash pH can help promote effective enzyme activity, good conversion, improved brewing efficiency, balanced malt flavor, and better overall wort quality. BESTMALZ also notes that proper mash acidification can contribute to brighter wort color and improved flavor stability.

Acidulated Malt works especially well in pale beers such as Pilsner, Helles, Kölsch, and other light lagers and ales, where the pale grain bill may not naturally lower mash pH enough for certain brewing-water profiles. However, it can be used in virtually any beer style when mash pH adjustment is needed.

BESTMALZ recommends using Acidulated Malt at up to 5% of the grain bill. The exact amount needed depends on your brewing water, grain bill, and target mash pH, so brewers should calculate or measure mash pH and adjust the amount accordingly.

Why Brew With BESTMALZ Acidulated Malt?

  • Helps lower and optimize mash pH
  • Useful when brewing with alkaline or higher-pH water
  • Grain-based alternative to separate mash acid additions
  • Can support effective mash enzyme activity and conversion
  • May help improve brewing efficiency
  • Can contribute to brighter wort color
  • Helps support balanced malt flavor and flavor stability
  • Particularly useful for pale lagers and ales
  • Can be used in any beer style when mash pH adjustment is needed
  • Recommended usage: up to 5% of the grain bill
  • Actual usage should be adjusted based on brewing water and target mash pH

For brewers looking for a straightforward, malt-based way to fine-tune mash pH, BESTMALZ Acidulated Malt is a useful addition to the grain bill. It is especially valuable when brewing pale beers with water that would otherwise leave the mash pH higher than desired.
