Briess Midnight Wheat Malt is an exceptionally smooth dark roasted wheat malt that provides deep black color with minimal bitterness, astringency, or harsh roasted flavor. At approximately 550° Lovibond, it is one of the best choices for brewers who want dramatic dark color without making the beer taste heavily roasted.
Unlike traditional Black Malt or Roasted Barley, Midnight Wheat is made from wheat rather than barley. Because wheat does not have the same husk as barley, it can develop intense color while avoiding much of the sharp, dry, and astringent character associated with heavily roasted barley malts.
Despite its extremely dark color, the flavor is surprisingly restrained. Midnight Wheat begins with a slight sweetness, followed by subtle hints of smooth roasted malt, and finishes exceptionally clean. Midnight Wheat is an excellent choice for Black IPA and Schwarzbier, where deep color is often desired without overwhelming hops or delicate lager malt character. It is equally useful in dark ales and lagers or simply as a color-adjustment malt in virtually any beer style.
It can also be substituted 1:1 for debittered Black Malt when a particularly smooth and clean source of dark color is desired.
