Weyermann® CARARYE® is a German caramelized rye malt that adds rich bread, coffee, dark chocolate, dried-fruit character, and a velvety-soft mouthfeel to beer. Made from high-quality German rye and specially caramelized to develop an intense flavor profile, CARARYE offers a unique alternative to traditional barley-based caramel and crystal malts.
At approximately 57–75.9° Lovibond, CARARYE contributes warm amber-to-brown color along with a complex combination of fresh bread, coffee, dark chocolate, and dried-fruit flavors. These deeper flavors provide substantially more complexity than standard pale rye malt while retaining the distinctive character and texture brewers look for when using rye.
One of CARARYE's most interesting contributions is its soft, velvety mouthfeel. This makes it especially useful in Rye IPAs, Hazy IPAs, Juicy IPAs, and NEIPAs where brewers want additional malt complexity and texture alongside expressive hop character.
It is equally at home in traditional rye beers such as Roggenbier, where it can deepen the bread-like rye character, or in darker beers such as Imperial Stout where its coffee, chocolate, and dried-fruit notes can complement roasted malts.
Weyermann recommends using CARARYE at up to 15% of the grain bill. It has no enzymatic activity, so it should be used alongside an appropriate base malt when mashing.
