Weyermann® CARAAROMA® is an intensely flavorful German dark caramel malt that adds dark caramel, dried-fruit, roasted-nut, and subtle roasted character along with deep color and reddish highlights. It is designed for malt-forward and dark beers where a small addition of specialty malt can create substantial flavor complexity.
At approximately 132.4–170.1° Lovibond, CARAAROMA is significantly darker and more intense than traditional medium or dark crystal malts. Its complex flavor profile combines deep caramel sweetness, roasted nuts, dried fruit, and the first subtle hints of roasted malt character, making it especially useful for building rich, layered malt profiles.
CARAAROMA also contributes deep color with a distinctive reddish hue, making it an excellent choice for Red Ales, Brown Ales, dark lagers, and other beers where both color and flavor intensity are desired. In Porters, Stouts, Old Ales, and Barleywines, its dark caramel and dried-fruit character can complement chocolate and roasted malts while adding another layer of malt complexity.
Because CARAAROMA is so flavorful, relatively modest additions can make a noticeable difference. Weyermann recommends using it at up to 15% of the grain bill, allowing brewers to adjust its contribution from an accent of dark caramel and fruit to a major part of the beer's specialty-malt character.
CARAAROMA has no enzymatic activity, so it should be used alongside an appropriate base malt when mashing.
