At approximately 105.6–120.6° Lovibond, Simpsons DRC contributes a deep brown color with attractive reddish highlights. Its flavor begins with intense dark caramel and sweet malt, followed by more subtle notes of burnt sugar, raisins, cherries, plums, and other dark dried fruits.
One of DRC's most interesting characteristics is its ability to provide some of the softer chocolate and roasted flavors associated with darker roasted malts without contributing the same level of bitterness or astringency. This allows brewers to build deep, layered malt character while maintaining a smooth, rich finish.
DRC is particularly well suited to Belgian Abbey and Trappist-inspired beers, where its dark caramel and dried-fruit character can complement expressive Belgian yeast flavors beautifully.
