Flaked Wheat is a mash-ready form of unmalted wheat used to add grainy wheat flavor, body, haze, and excellent head retention to beer. It is a traditional ingredient in Belgian-style wheat beers and has also become a popular addition to modern Hazy IPAs and NEIPAs where a soft mouthfeel, stable haze, and persistent foam are desired.

At approximately 0.94–1.12° Lovibond, Flaked Wheat contributes very little color, helping maintain a pale straw-to-golden appearance. Compared with malted wheat, it provides a more noticeable raw grain and fresh wheat character while contributing substantial protein to the finished beer.

Its high protein content makes Flaked Wheat especially useful for improving foam formation and head retention. Those proteins can also contribute body and cloudiness, which is desirable in styles such as Witbier and modern Hazy IPA where a clear finished beer isn't necessarily the goal.

Flaked Wheat is pre-gelatinized, so it does not require a separate cereal mash or pre-cooking. Simply add it directly to the mash with your other grains. Because it is unmalted and does not provide the enzymes necessary to convert its starches, it should be mashed alongside an appropriate enzymatic base malt.

Like other huskless grains, larger additions of Flaked Wheat can make lautering more difficult. Rice hulls can be helpful when using substantial amounts, improving mash drainage without adding flavor, color, or fermentable extract.
