Flaked Rye is a mash-ready brewing adjunct that adds distinctive rye spice, cracker-like grain flavor, and a dry, crisp character to beer. It provides an easy alternative to malted rye when you want noticeable rye flavor and texture without having to mill the grain.

At approximately 3° Lovibond, Flaked Rye contributes relatively little color while delivering a surprisingly noticeable flavor. Expect a combination of spicy rye, crisp grain, and cracker-like notes that can add complexity to both hop-forward and malt-forward beers.

Flaked Rye works particularly well in Rye Pale Ales and Rye IPAs, where its spicy grain character can complement citrus, pine, and other assertive hop flavors. It can also add an interesting layer of complexity to Saison, Scottish Ale, Imperial Ale, and other specialty beers.

Because rye has a fairly assertive flavor, a little can go a long way. Starting around 5–10% of the grain bill is a good approach when you want noticeable rye character without allowing it to dominate the beer. Higher percentages can be used when brewing intentionally rye-forward styles such as Roggenbier or heavily rye-accented ales.

Flaked Rye is pre-gelatinized and mash ready, so it does not require milling or pre-cooking. Simply add it directly to the mash with your other grains. Because it does not provide sufficient enzymes for conversion, it should be mashed alongside an appropriate enzymatic base malt.

Rye is huskless and can make the mash thicker and more difficult to lauter, particularly when used at higher percentages. Adding rice hulls can help improve mash drainage without contributing flavor or fermentable extract.
