Flaked Corn, also known as maize, is a classic brewing adjunct used to create lighter-bodied, crisp, highly drinkable beers while contributing fermentable starch with very little flavor of its own. It is especially well known for its use in American lagers, Mexican-style lagers, Pre-Prohibition lagers, and Cream Ale.

At approximately 0.8° Lovibond, Flaked Corn adds very little color while helping produce a clean, bright golden beer. Compared with an all-malt grain bill, corn can reduce overall malt intensity and body, resulting in a beer that finishes lighter, drier, and crisper.

Flaked Corn contributes fermentable starch that can increase alcohol without adding significant malt flavor. Its character is generally mild and neutral, although it can contribute a subtle roundness and gentle corn-like sweetness when used at higher percentages.

This makes Flaked Corn particularly useful when you want to showcase a clean lager fermentation or create an easy-drinking beer without the fuller malt character that would come from using 100% barley malt.

Flaked Corn is pre-gelatinized, so it does not require cooking or a separate cereal mash before use. Simply add it directly to the mash with your other grains. Because corn does not provide the enzymes necessary to convert its starches, it should be mashed alongside an appropriate enzymatic base malt.
