I learned while reading about this coffee that the Guji region was actually once part of the Sidama region. It has since been recategorized as its own region, adding to my confusion over Ethiopian geography. However it is shown on the maps, Guji has pretty much perfect coffee growing conditions. The higher altitude of the mountains allows the coffee beans to mature more slowly, which leads to greater complexity of flavor as well as a denser bean that holds up better through the roasting process. This excellent washed process Ethiopian bean has aromatics of lime, tangerine, tropical fruit, and sweet florals. The cup is crisp and clean with sugary notes of orange blossom, lime zest, tangerine, and peach.
