The honey method, if you’re unfamiliar, is basically a hybrid of the washed and natural processes (if you don’t know those processes, you’d best get to Googlin’!). After harvest, the skin of the coffee cherries is removed but the sticky, honey-resembling mucilage is left on to impart some fruity sweetness into the seeds. The results are rather tasty. For instance, this particular coffee has aromatics of stone fruit, berry, honey, and a faint nuttiness. The cup is bright and nuanced with notes of cocoa powder, raspberry, strawberry, plum, almond, and honey. That last note, by the way, is purely coincidental. There’s no actual honey in the mix here.
