Aroma, Flavor and Characteristics: Powerful and striking, displaying oily fresh citrus and wild herbal character; dry hopping can bring out pine and spice. It features a punchy hoppiness and deep, pensive aroma with understated citrus notes—perfect as a dual use hop. Commonly used late in the boil and, when fresh, Columbus has a herbal flavor with a lemon citrus back note. Usable in a number of styles, notably American-style ales.
Brewing Application: Excellent bittering capability as originally intended, but craft brewers have also harnessed CTZ’s intense, citrus-and-spice pungency for American-style IPAs. This high-alpha hop has gained a lot of favor for its aromatic qualities. Bright, floral, spicy, and pungent, Columbus hops are great in American Ales, from IPAs and Pale Ales to Stouts and Porters.
